Smoked Salmon with Chive Potato Pancakes

8 oz. smoked salmon, pre-sliced
1 large potaoto, shredded
1/2 C. all purpose flour
1 egg
salt and pepper to taste
2 T. spanish onions, diced
2 T. chives, finely chopped
2 T. butter or olive oil

Shred potato into egg. Add other ingrdients and mix well. Heat saute pan until hot. Add oil and drop approximately 1/4 C. of pancake mixture into the pan and immediately flatten out with a spatula. Cook on both sides until golden brown. Drain on a paper towel.

Note: Can be served warm or cold. Garnish with  smoked salmon, 1/2 ounce of spicy mustard* and whole chives.


* Spicy Mustard Sauce

1 C. mayonnaise
1/4 C. white wine
1 t. Coleman's Dry Mustard
3 dashes Worcestershire Sauce
1 dash cayenne pepper
2 t. lemon juice
1/2 t. sugar
salt and pepper to taste

In mixer or by hand, combine mayonnaise and mustard. Add wine, Worcestershire sauce, lemon juice and then combine other ingredients. Refrigerate. May need to adjust seasonings or consistency after refrigeration.
