BUSHMAN'S SKILLET

Boma

Yield:  6 servings

Ingredients:

6 each      Potatoes, cut in wedges and blanched
1 each      Onion, sliced
½ each     Red Bell Pepper, sliced
½ each     Green Bell Pepper, sliced
8 ounces   Diced Meat (roast pork, roast beef, roast chicken)
Olive Oil
Salt and Pepper
6 each      Eggs


Method:

In a hot pan, sauté the onions, peppers, and potatoes in olive oil.  Season with salt and pepper.

When the vegetables are cooked, add the meat and cook for five minutes.

Crack the eggs on top and cover with a lid until the eggs are cooked.
