Walt Disney's Oatmeal Cookies Yield: 48 servings 2 c Flour 1/2 ts Salt 1/2 ts Baking soda 1 ts Baking powder 3/4 ts Cinnamon 1 1/3 c Butter 1 1/4 c Granulated sugar 3/4 c Brown sugar 2 lg Eggs 2 tb Water 1/2 ts Vanilla 2 1/2 c Uncooked oats/not instant 1 1/4 c Raisins In medium bowl, combine flour, salt, baking soda, baking powder and cinnamon. Set aside. Cream butter in very large bowl. Beat in granulated and brown sugars. Beat in eggs, 1 at a time. Add water and vanilla and mix until well blended, about 4 minutes. Mix oats, raisins and flour mixture into sugar mixture & stir until thoroughly blended. Drop by large tablespoons onto ungreased baking sheet. Bake at 350 degrees 9 to 14 minutes, or until light-brown in color. Cool on baking sheet before removing from pan. Makes 4 dozen. Each cookie contains about: 128 calories, 23 mg cholesterol, 6 grams fat, 18 grams carbohydrates, 2 grams protein, 0.12 grams fiber.

Walt's Own Chili
While this is not strictly a Disneyland recipe, it is from Walt.
(From the Spring '95 issue of "The Disney Magazine")
2 pounds ground beef (coarse) 2 whole onions (sliced) 2 whole garlic cloves (minced) 2 pounds pink beans (dry) 1/2 cups celery (chopped) 1 teas. chili powder 1 teas. paprika 1 teas. dry mustard 1 can solid pack tomatoes (large can) salt (to taste) For spicier chili, add a pinch of the following: coriander, tumeric, chili seeds, fennel, cloves, cinnamon, dry ginger, small yellow Mexican chili pepper.
Soak beans overnight in cold water. Drain. Add water to cover 2 inches over beans and simmer with onions until tender (about 4 hours). Meanwhile, prepare sauce by browning meat and minced garlic in oil. Add remaining items and simmer 1 hour. When beans are tender, add sauce and simmer 1/2 hour. Serves 6-8.
