STEAK AND BEAN SOUP
Yachtman's Steakhouse, Disney's Yacht Club Resort

         
  1       lb           Bottom round steak, cut 1/2" cubes
  2       tb           Vegetable oil
  1       c            Onion, coarsely chopped
  1/4   c            Celery, coarsely chopped
  1/4   c            Carrot, coarsely chopped
  1/4   ts           Garlic, minced
  3       qt           Beef stock OR broth
  1       c            Kidney beans
  1       c            Pinto beans
  1       dash       Tabasco
                         Salt and pepper
  1/4   c            Tomato paste

 Soak beans in cold water overnight. Rinse; drain twice until quite dry. Heat oil in soup pot; brown meat. Add onion, celery, carrots, and garlic;saute until tender. Add stock and beans; simmer 45 mins or until beans are tender. Add Tabasco (to taste), salt and pepper. Stir in tomato paste; simmer 5mins.


Steak Sandwich

Yield: 4 servings


     4      Strip sirloin steaks, 6oz ea
     6 oz Flour
     2 T   Red pepper flakes
     4      Sub rolls, 6"
     1 lb   Onions, thinly sliced rings
     2 c    Milk
          Oil for deep frying

 
 Combine flour and pepper. Mix well. Soak onion in milk 15 mins. Drain and dust with flour and pepper mixture. Deep fry in hot oil until golden brown and crisp.
 Broil steaks as desired; place in rolls, top with onions.


Broccoli Cranberry Salad  
Cape May Buffet at the Beach Club

4 cups broccoli flowerettes (chopped fine)
1/4 cup diced celery
1 8 oz. pkg. dried cranberries
1/4 cup shelled sunflower seeds

Dressing:
1 cup mayonnaise
1/4 cup sugar
1/4 cup vinegar

In a large bowl, combine broccoli, cranberries, sunflower seeds and celery. Pour dressing over and toss. Keep refrigerated.


Milky Way Cake

Ingredients
6 regular-size Milky Way bars
4 eggs
1/2 teaspoon baking soda
2 sticks butter (or margarine)
2 cups sugar
1 1/2 teaspoons vanilla
2 1/2 cups flour
1 cup buttermilk

GLAZE:
1 bar German sweet chocolate
1 tablespoon butter
1/4 cup water
1 cup confectioners' sugar
1/8 teaspoon salt
1/2 teaspoon vanilla

Directions
CAKE: Over low heat, melt Milky Way bars and 1 stick butter. Set aside. Cream other stick of butter with sugar and eggs; mix well. Add flour, baking soda, buttermilk and vanilla; stir well. Add Milky Way mixture and beat with mixer until batter is all one color. Pour into greased and floured Bundt-style pan and bake at 350 degrees for 1 hour or until toothpick inserted comes out clean.
GLAZE: In small saucepan, melt chocolate and butter with water. Combine sugar and salt and gradually stir in chocolate mixture. Add vanilla and spread on cake.
