Chilled Orange and Mango Soup

30 lbs frozen mango puree
1 gallon buttermilk
2 gallons orange juice
32 oz. clear honey
Season with: 3oz of salt and 2oz of allspice.

Blend mixture until totally smooth. Chill for 1 hour and serve garnished with fresh mint. Makes 7 gallons.



Approximately:

2 lbs mango puree
1 C. buttermilk
2 C. orange juice
1/4 C. honey
Salt and allspice

Makes 2 quarts.
